Fabio Miani
HEAD CHEF
Fabio is from Italy where his passion for cooking was born. From a young age he was intrigued by watching his father cook at home for the family as he experimented with new recipes and making new dishes using produce from the family vegetable garden. At the age of 18 he took the decision to move to England - where his partner’s roots were – beginning a whole new chapter. But he retains the same passions as his father and has his own vegetable garden at home providing fresh vegetables for the table. He joined The Wildebeest in July 2018 and as Senior Sous Chef and quickly proved himself moving up to Head Chef. He continues to develop his skills, pushing himself to be the leader that so many chefs dream of becoming.

Daniel Smith
CHEF PATRON
Norfolk-born, Daniel has an impressive track record over the last 24 years which includes working for the acclaimed Michel Roux Jr at the two Michelin-starred London restaurant, Le Gavroche before moving back to Norfolk to work with another renowned chef - Galton Blackiston at Morston Hall where Daniel achieved his first Michelin Star as Head Chef, aged 23.
He then spent a decade at the popular Wildebeest in South Norfolk before opening The Ingham Swan, his first restaurant, in April 2010. During this time, he has built up a solid reputation and loyal following as being one of Norfolk's most innovative and creative chefs. In April 2015 Daniel returned to his roots following his acquisition of The Wildebeest.
