Guinea Fowl Is Great...


We love to cook  and to eat guinea fowl.  It's a brilliant alternative to chicken or even to the traditional turkey at Christmas.  A good source of vitamins and minerals it's high in protein and low in cholesterol, has a subtle gamey flavour and is at its best at this time of year.

 If you want to try it at home we'd recommend looking for free-range guinea fowl which is becoming much more generally available from good independent butchers.  If you see the eggs, they're well worth buying too.   It is prepared in a similar way to chicken but as it is generally a smaller bird it is important not to overcook and let it dry out, so regular basting is recommended when roasting a whole bird.  If you prefer, you could remove the legs and wings and marinate for a few hours before grilling and cook the breasts separately - we feature Thyme Roast Guinea Fowl Breast on our Christmas Taster menu. A whole guinea fowl will keep in the fridge for 3 to 4 days once the giblets are removed.
